Banana Crispy Bites - Professional Chef's Recipe
INGREDIENTS

🍌 Banana Crispy Bites

Crispy on the outside, soft and naturally sweet on the inside. These easy banana bites are made in the air fryer for a quick and delicious snack.

Ingredients

- 2 pre-made crepes/hand-grab cakes ), approximately 200g, thawed
- 2 medium ripe but firm bananas
- 1 large egg
- 2–3 tablespoons black sesame seeds
- Cooking oil spray, optional

Instructions

1. Prepare the Crepes

Remove the crepes from their packaging and allow them to thaw at room temperature for 5–10 minutes if frozen.

They should be pliable but still slightly cold.

Place one crepe flat on a clean work surface.

2. Prepare the Bananas

Peel the bananas and make sure they are ripe but still firm. Avoid very soft or overripe bananas.

Pat the bananas dry with paper towels to remove excess moisture.

3. Wrap the Bananas

Place one banana lengthwise in the center of the crepe.

Starting from one long side, carefully roll the crepe tightly around the banana. Continue rolling until the banana is completely covered.

Gently press the seam together to secure the roll.

Repeat with the second crepe and banana.

4. Slice the Rolls

Place the rolls seam-side down on a cutting board.

Using a sharp knife, cut each roll into thick rounds, approximately 1–1.5 inches thick.

You should get about 10–12 pieces from each roll, giving you approximately 20–24 banana bites in total.

5. Prepare the Egg Wash

Crack the egg into a small bowl and beat well with a fork until smooth and uniform.

6. Add the Egg Wash and Sesame Seeds

Place the banana bites cut-side up.

Brush the exposed surface of each piece with the beaten egg.

Sprinkle black sesame seeds generously over the egg-washed surface and gently press them down so they stick.

7. Preheat the Air Fryer

Preheat the air fryer to 180°C (356°F) for 3–5 minutes.

If desired, place parchment paper in the basket and lightly spray it with cooking oil to prevent sticking.

8. Arrange the Banana Bites

Place the banana bites in a single layer in the air fryer basket, with the sesame-seed side facing up.

Leave some space between the pieces so the hot air can circulate properly. Cook in batches if necessary.

9. Air Fry

Air fry at 180°C (356°F) for 5 minutes.

Check the bites. They should begin turning golden brown and the sesame seeds should look lightly toasted.

Continue cooking for another 5 minutes.

Total air-frying time: approximately 10 minutes.

If the bites are not crispy enough, cook for an additional 2–3 minutes.

10. Cool and Serve

Carefully remove the banana bites from the air fryer and allow them to cool for 3–5 minutes.

The outside will become crispier as they cool, while the banana inside will remain soft and warm.

Serve immediately while warm.

Variations

- Drizzle with a little honey after air frying.
- Sprinkle cinnamon over the crepe before rolling.
- Use white sesame seeds instead of black sesame seeds.
- Add a small amount of shredded coconut with the sesame seeds.
- Serve with Greek yogurt for extra protein.
- Add fresh berries on the side.
- Dust lightly with powdered sugar for a sweeter dessert.

Storage & Reheating

Best served: Warm and fresh from the air fryer.

Refrigerator: Store in an airtight container for up to 2 days.

Air fryer: Reheat at 160°C (320°F) for 3–4 minutes until warm and crispy.

Microwave: Heat for 20–30 seconds, although the exterior will become softer.

Avoid refreezing after cooking, as the texture may deteriorate.

Make-Ahead Option

The banana bites can be prepared and refrigerated for up to 4 hours before cooking.

For the best texture, air fry them just before serving rather than cooking them in advance.

Common Mistakes to Avoid

Using overripe bananas:
Very soft bananas can become difficult to roll and may make the filling too mushy.

Rolling too loosely:
A loose roll may unravel during cooking. Roll firmly and press the seam together.

Overcrowding the air fryer:
Too many pieces at once can prevent proper air circulation and lead to uneven browning.

Using excessive heat:
A temperature that is too high can brown the crepe before the banana is properly warmed.

Skipping the egg wash:
The egg helps the sesame seeds stick and gives the bites a beautiful golden finish.

Cutting the pieces too thin:
Thicker pieces help maintain the soft banana center while the outside becomes crispy.
