Tomato Minced Meat & Egg - Professional Recipe

INGREDIENTS:

300g ground pork or beef (chuck shoulder)

1 tablespoon light soy sauce

1/2 tablespoon cornstarch

1 tablespoon oil

For the Dish:

3 large eggs

3-4 medium fresh tomatoes (ripe)

2 tablespoons oyster sauce

1/2 cup water

1 teaspoon salt (adjust to taste)

1/2 teaspoon sugar

1 tablespoon cornstarch water (slurry)

2 tablespoons neutral oil

2 green onions/scallions (for garnish)

White pepper to taste

STEP-BY-STEP INSTRUCTIONS:

Step 1: Marinate the Ground Meat

Place 300g ground pork or beef in a mixing bowl

Add 1 tablespoon light soy sauce, 1/2 tablespoon cornstarch, and 1 tablespoon oil

Mix thoroughly until the meat is well coated and sticky

This tenderizes the meat and helps it stay moist during cooking

Set aside for 10-15 minutes to marinate

Step 2: Beat the Eggs

Crack 3 eggs into a separate bowl

Beat vigorously with chopsticks or a fork until completely homogeneous

The eggs should be uniform in color with no visible whites

Step 3: Prepare the Tomatoes
