INGREDIENTS:
Wagyu beef slices (high-quality marbled beef)
Green peppers (medium, cut into strips)
Light soy sauce (2 spoons/30ml)
Oyster sauce (1 spoon/15ml)
Chicken essence powder (pinch)
Sea salt (to taste)
Neutral oil for cooking (vegetable or peanut)
STEP-BY-STEP INSTRUCTIONS:
Step 1: Prep the Wagyu Beef
Pat dry the wagyu beef slices with paper towels to remove excess moisture
This ensures better caramelization and prevents steaming
Set aside in a clean bowl (do not season yet)
Step 2: Mise en Place (Setup)
Cut green peppers into 1/4-inch thick strips
Combine soy sauce, oyster sauce, and chicken essence in a small bowl
Keep all ingredients within arm's reach of your wok
Step 3: Heat the Wok Properly
Place wok over high heat for 30-45 seconds until smoking
Add oil and let it heat for another 20 seconds
The wok should be extremely hot before cooking begins
Step 4: Char the Green Peppers (Wok Technique)
Add green pepper strips to the hot wok
Do NOT stir immediately—let them sear for 2-3 seconds
Stir-fry briskly for 2-3 minutes until peppers are 60-70% cooked (still slightly crisp)
Transfer peppers to a clean plate, keep warm
Step 5: Sear the Wagyu Beef (Critical Step)
Working quickly, add wagyu beef to the same hot wok
Let meat rest undisturbed for 15-20 seconds to develop color
Toss and stir-fry for 45-60 seconds total (wagyu cooks quickly due to marbling)
Beef should remain medium-rare to medium
Return green peppers to the wok immediately
Step 6: Combine & Season
Toss beef and peppers together for 10-15 seconds
Pour in the pre-mixed sauce (soy sauce, oyster sauce, chicken essence)
Add a pinch of sea salt to enhance flavors
Stir-fry continuously for 30-45 seconds to coat evenly
Step 7: Reduce & Glaze
Continue cooking until the sauce coats the ingredients
The sauce should become glossy and reduce by 50%
This takes approximately 20-30 seconds
The wok should still be audibly sizzling
Step 8: Finish & Plate
Transfer immediately to a serving plate or white bowl
Arrange beef and peppers attractively
Drizzle any remaining sauce over the top
Serve immediately while hot
